An introduction....

This is a survival guide to meal prepartion for one.  After the demise of my nearly eight year relationship, I found myself alone.  I had always taken delight and time into dinner preparation and presentation for at least two to four people.  So, when I found myself alone, I thought I would never cook again.  I missed that and was not willing to accept what dinner options were available for single people.  My first genius idea was to follow the "single serving" route, which consisted of individual servings of disgusting, processed, sodium filled foods such as pizza, mac and cheese, soup...you get the picture.  After countless disappointing "meals" as well as bowls of cereal, I took a moment to reflect.  I was sitting on the couch and thought to myself, why am I subjecting myself to this inferior food simply because there is only one person in this house????  I decided to plan dinner meals....for ONE!!!  I could still focus on flavor, healthiness, sustainability AND presentation!  Please join me on my journey, as I chronicle the obstacles, as well as triumphs of cooking for one....  I predict successess, as well as failures, all of which I will document.  Here we go!
