Tonight may be the fourth longest blog in all of history..picture wise, that is...Everything has been painfully documented....I don't know how I ended up with this many pics for Tortilla Soup...must be your lucky night! Maybe my ghetto cam doesn't wanna be thrown in the trash???? hmmm.... Anyhoo...speaking of luck, your night is about as lucky as mine...after all, we did unclog the vacuum...could anything possibly be MORE exciting that THAT??? Didn't think so.....moving along...on a side note in regards to your luck...yeah, I didn't bother to photograph the unclogging of my vacuum...consider yourself super-uber-duper lucky...yup..because I totes could have done that...yup..
Dinner Components Part #1: Diced Tomatoes, Chicken Stock, Bay Leaves, Paprika, Chili Powder, Cayenne, Oregano, Garlic and Chicken (coated with these herbs and spices)...
Dinner Components Part #2: Sour Cream, Cheddar Cheese, Salsa, Guacamole, Onion and Lime...This is the calorie laden portion of the ingredients...eliminate these...eliminate at least 1000 calories....but WHO would want to do THAT????
Tortilla Soup would NOT be Tortilla Soup without fried Tortillas...you need some peanut oil for this...or any oil..but peanut is the best, BTW...
Slice 4 Tortillas and Zero Fingers....I told you it was a good night for us!!! Musta been those Karma points I gained from unclogging my vacuum...
Proceed to Fry in Batches in, none other....yeah..the Skillet of Justice was feeling neglected....I don't blame him...It's Been a Long Time....oh, and listen to a little Cake while you do this...it's fun..you totes can shake bootie...
Fried Tortilla Strips...these are sooooooooo delicious....I easily could have just had these for dinner..

Tonight was filled, not only with excitement, but action shots as well...it's my thoughtful nature...couldn't help myself..again, it's that luck to which I had previously referenced...perhaps you'll wanna go buy a Powerball ticket...just sayin'....
Add minced garlic and onion to your oil and saute..preserving the texture, moisture and flavor...I've become an expert in this method..it's a shame I don't have room for it on my resume...
Add your spices...I didn't even measure them...I merely added to little bit of this and a little bit of that..you can always adjust later....go with the flow, my friends....life is too short...and before you know it..you will be sans Chainsaw Juggler...and that's just sad...
Add Chicken Stock....
And Diced Tomatoes...I only used half of this can since it was just little ole' me....I'm not necessarily all that little..but my appetite is...FYI.. ;-)
Throw in half of your tortilla strips and a couple of bay leaves...allow to simmer for approximately 30 minutes...That gives you an entire half of an hour to shake bootie and do lame crap...which we most certainly did...yup...mostly lame crap...care for me to elaborate???? hahahahahhaa

Once your soup has cooled...this is the most important part...we all know what happens when you put hot liquids in a blender..I know I've shared my stories..and unfortunately I have more than one...slow learner I suppose....remove the bay leaves and blend your soup...in, none other...Bob!! He did spend 15 years getting loaded, until his liver did explode, which is why he's happy being a blender these days...and Thank You, NOFX...and Fat Mike...you rock!!!
Return your blended soup into a saucepan...
Add your shredded chicken and simmer..yup...this luck thing, I'm telling ya...simmering and sauteing...all on a Monday...throw in unclogging a vacuum... LuckE Night...my new porn name...hahahahahahahahaha...JK, totes...JK....go buy a Powerball ticket..

Place your tortilla strips and grated cheddar in the bottom of a bowl..it's great...tee-hee...I attempted to refrain...Yeah, I'm secretly in 8th grade...shhh...I'm sure that's a violation of my lease or some such nonsense...I'll be there in a heartbeat....oh, yeah..
Ladle..it's a type of spoon used to scoop and serve soup...created at an angle to facilitate the lifting of liquid out of a pot and into your bowl...so, um, yeah...do that with your soup and pour atop your great cheese and tortilla strips...top with sour cream, guacamole and green onions..the green onions were a last minute decision...I needed some garnish...This was sooo delish...heartburn city...but delish, nonetheless...
So...it was a Monday..we tackled spread sheets and clogged vacuums and soup...again, the excitement never ceases on the west side..shhhh...good thing I ironed my cape this weekend...but it was an excellent evening...Just when I thought I had lost all faith in humanity...a sassy and smart gal, sporting purple Doc Martens, no doubt...helped me put things into perspective, and for that I am thankful...Life is not about what you don't have...it is about what you do have...and we get so wrapped up in consumerism and social media and all types of other crap, for lack of a better word..and that's my best excuse.., we tend to forget...and we forget that which is important...I guess every once in awhile we need to be reminded of such.....Go make tortilla soup...it is soooo delicious...perfect for winter...just make sure you have some Tums...heartburn sucks...not as much as heartbreak...but it feels pretty much the same...yup...This is Written-Off Penny saying g'night..we'll see all y'all tomorrow...peace out...
