Moving along..as we should..um, dinner this evening....braised short ribs, yellow rice and roasted carrots....shall the train wreck commence...hahahhahaha....again, I am kidding...not about dinner...
Red Wine, Short Ribs, Red Onion, Carrots, Pancetta, Butter, Balsamic Vinegar, Roma Tomato, Garlic Thyme, and Demi Glace (I cheated on that one...shhhh.....) It is against my cooking religion, but I had no choice..please don't judge...I recycle..that more than makes up for any of this..and I did read Steinbeck..So, there! hahahahahahha
We FINALLY got to chop stuff...yeah, we did...again, I do enjoy the chopping...carrots, onion, garlic and tomatoes..chop away, my friends...here we go yo'......
Generously season the short ribs...they seldom complain..speaking of being generous...someone got my debit card information and apparently I made a generous donation to the National Kidney Foundation...oh, and then I bought a bunch of clothing from a store in Italy...Gotta love the internet...yeah...

Sooooooooo.....the short ribs..well..once they have been browned and removed...saute onion, carrot and garlic..in your dutch oven...proceed to add your roma tomato..but it only works if you have a ginormous man-claw..see, I have one!!! I'll bet I could sell it on Ebay...yeah...
Deglaze with a little balsamic vinegar...
This is where we 'cheat' so to speak....add your beef demi-glace....that is SOOOO hard to make from scratch...please don't judge...but add that...yeah...and zip it...
Enter, stage left...pinot noir....the beauty of cooking with wine...you can totes drink the leftovers...not that I drink or anything..nope...LOL...add some wine....simmer, baby...simmer away.....it brings out the flavor...flavors that are fabulous...oh, and a little thyme entered the picture at some point...I forget when..but, as you can see...I forget lots of stuff...
So there is a second-half to this meal..the sides....give me a second...I need to get my story straight....hahahahaha...JK...hold on, my friends...it is THAT exciting....carrots and yellow rice..yeah..I did NOT stutter...although I used to when I was little...shhhhh...
Chicken Stock, Yellow Rice, Butter, Olive Oil, Carrots and Parsley
The action shots continue! I told you I would not disappoint on a Saturday night..Again, boredom...a camera...zero boyfriend..and the You Tube...it is the PERFECT equation for disaster...or entertainment...you be the judge...tisk-tisk...Oh, add your yellow rice to a little butter and olive oil..
Once the rice has browned, add chicken stock and simmer...simmering is fun..it is a food preparation technique in which foods are cooked in hot liquids....I have yet to make a gentle murmuring sound...yeah...simmering rocks...like knee socks..and Pierre..and chainsaw jugglers...
We'll need to add a little color to this yellow rice...and Italian parsley does the trick...stay tuned...the finale is memorable...We can burn brighter than the sun..tonight..we are young...yup...carry me home, tonight...
