Now as much as I enjoy pink hearts, yellow moons, orange stars, green clovers, blue diamonds and purple horseshoes..I recently spent time back home, where we ate way too much..so we must be mindful...muffin tops belong on muffins..Where was I??? Ah, dinner....pan seared tenderloin wrapped in pancetta and topped with fried shallots, lobster mashed potatoes and broiled zucchini with carrots...I also made a lobster-butter pan sauce....somehow I thought that would fit in...but then again I think lots of things that don't always seem to pan out...hahahahahaha...I was not laughing at the harsh reality of that statement, but at the fact it really was a pun, of sorts...if you think about it...sorry...again..I do blame those spreadsheets..stay tuned..We secretly are wrong in all the right ways..yup..
Dinner Components: Tenderloin, Zucchini, Carrots, Shallot, Garlic, Potatoes, Lobster, Olive Oil, Butter, Cream, Parsley and Sherry....
We got to chop some vegetables again..YAY!!!!! This is one of my most favorite parts, EVER...and you can shake bootie...and dream of Pierre...and becoming Canadian and becoming Mrs. Pierre..and dream about Simple Plan...again, I am simple..so it is only apropos, no????
Place your zucchini on a rack after it has been tossed in olive oil and pepper...eventually we will broil this until it is appropriately browned...I am rather certain there are zero additional photos of the zucchini cooking process...I get so distracted...then I forget...then something else happens and it typically involves some sort of bodily injury...probably not the best thing for a food blogger...but I am an amateur..hahahahaha...I know it is not obvious...and I had to LOL over that one...this website hardly screams 'professional.' hahahahahahaha Again, no worries..I continue to understand it is only I whom finds myself funny in any capacity...please...continue to read...it does get better...perhaps...;-)

Saute your lobster in some butter...allow it to brown and such...I previously chopped this up...but there is no documentation to substantiate such a claim...however...I did happen...
Remove the lobster, then in the same pan, sear your filet...again, as I have preached for blogs and blogs...I do sound like a broken record..but that's OK, in my nerdy hoot-owl notebook...it should be Chuck Woolery-style...two and two...you can't go wrong..nope...someday, if I ever have a dinner guest, then perhaps they can dispute my claim...until then..what I say stands....that's my story and I'm sticking to it...yup...for lack of a better word as well...and, yeah...we couldn't go an entire blog without a Green Day reference...it just wouldn't be the same...I am the last of the American Girls...in case you forgot...hahahahahaha..
Proceed to deglaze...no, we were NOT burning down the Headwater's Apartments...nor did we set off any smoke alarms...thank heavens...I only have one good ankle...so I've been careful to avoid standing on swivel chairs...and remember the importance of ventilation....tisk-tisk....
Once the chaos has settled from the deglazing process...add butter, cream and cream cheese...yeah...I'm STILL channeling Paula Deen...but this is my last night...for reals...
The mashed potatoes...well, they boiled in H20, a lobster tail shell and some garlic...here they are drained...
Proceed to add the lobster meat, cream and butter and mash...again...I failed to record these additional steps..

Pan Seared Tenderloin, Butter poached lobster mashed potatoes and zucchini...topped with crispy shallots, carrots and lobster cream sauce...
I HATED this pic...sorry...I believe it was the positioning of the zucchini...merely an observation...but it didn't look like the dish I had envisioned...oh, well..isn't that always the case?????
Well, my internet friends...that's about what I could do on a weekday night...after spending hours upon hours with an unforgiving spreadsheet, or two, or three.....I plan on returning tomorrow...with a lighter menu and such....again...this muffin top needs to stop...and I shall soon have my new debit card, AND the generous donation I made to the National Kidney Foundation has been returned..although, I feel I may regret that in about 10 years...so I can purchase a new camera...and then I will have no excuses...Remember, we are wrong, but in all the right ways...and we want to be Canadian...someday we shall find our way...and perhaps it will involve a CSJ...or that super-cute guy I met on the plane...or perhaps a dream yet to be realized...my soul is not yet broken..although it is on the verge...see all, y'all tomorrow...g'night....and peace out from written-off penny...
