Cheese Cosmo...an Ode by Lesley Brennan

"Cheese cosmo, cheese cosmo, cheese cosmo.  Oh, how I love-oooooo, my-a-cheese cosm-oooo!"  (insert music here)...

Boy, I do really miss them!  Nothing of the like can be found out here on the west coast.  Perhaps the closest attempt would be from Quiznos, and the only similarity is the fact they toast subs.  Can I get a yuck?!?!  Can I get another yuck?!?!  Is anyone that desperate for a corporate substitute???  For those of you unfamiliar, a cheese cosmo is basically cheese on a sub bun, toasted in the oven and topped with things to your liking.   There is something magical, something that cannot be explained about the cheese cosmo.  It sounds rather primitive...but I can assure it it not.  Only at home can one enjoy a comparable version, when outside PA.... super tasty, messy and absolutely scrumptious. 

This evening I decided to make a mini version on one of my breadsticks.  I had lettuce, onions, oil, provolone, and most importantly, mayonnaise :-)  I placed the cheese on one half and broiled until melted and slightly crispy.  Here were the components prior to construction:

To complement the cosmo, I made some pasta salad.  Here are the ingredients...
Mini fusilli, carrots, olives, marinated mozzarella, Genoa salami, herbs and a homemade creamy Italian dressing (not pictured).

Again, tomatoes, kalamata olives, roasted red peppers, green peppers....all could have been added.  The beauty of this side is that you can make do with what is on hand, and it still tastes great!

Here's the final meal.  Uncomplicated, trouble-free and whimsical!  Just like me.  Hahahaha.  Just kidding :-)  But am I kidding about the meal...or myself...one will never know!

One major feat this evening was the fact that E.V. finally got up on the couch.  I know one would typically not complain about such things, however I would much prefer she be on the couch with me as opposed to hiding out.

You must be a parking ticket because you've got fine written ALL over you!


Oh, yeah...you got that right!!  *wink* *wink*

Again, the pleasure has been all mine....I can assure you on that!  Have a terrific evening, and go get or make a cheese cosmo.  It will greatly improve your life.  Trust me!
