Sunday Night Blues...

I can recollect, as a child in school, how depressing Sunday nights always seemed to be (except summertime when there was no school)....  The thought of homework and getting up early, as well as all othe responsiblities that followed.  Not much has changed since those days.  Only now I have replaced homework with office work, and trust me, it's not ANY better.  Sunday night, still to this day, signifies the ending of two complete days devoid of work.  Alright...these depressing thoughts will come to an end, until next Sunday!

E.V. and I had a terrific day.  The weather was splendid and we made sure to take full advantage.  We began at Gabriel Park for a walk at the dog park.  While there I realized today a picnic in the park would have been just the thing..it was an idyllic setting.  Nonetheless, as I thought more about it, I lacked the components necessary for said picnic, such as a picnic basket as well as an eating companion.  Yogi??  Yogi Bear??  Are you available next weekend for a picnic??  I am fully aware of your infatuation for them and would greatly welcome your companionship, so give me a call!

Our quest for fun continued with a short-lived trip downtown...mostly to sniff cars.  I, myself, refrained from sniffing cars as people can be sooo judgmental these days!  As we headed for home, I decided to stop at this little trail off of Terwilliger, not far from the apartment.  It's kind of like being in the woods but you don't have to worry about getting lost or carrying a compass.  E.V. quite enjoyed the trail!

We then returned home to begin preparation for this evening's meal.  My kitchen has become rather barren, but I have refrained from shopping until all perishable food has been depleted.  It's going to be tricky these next few days, but tonight I was actually pleased with the success of my experiment.

On the menu....can I get a drum roll please???...just kidding.  Occasionally I find amusement in being dramatic about the little things! :-)  I prepared, as the main course, a chicken roulade stuffed with prosciutto and provolone cheese which I coated with panko breadcrumbs and baked for 35 minutes.  The side dish contained angel hair pasta and arugula tossed with a parmesan cream sauce.  The parmesan cream sauce was comprised of equal parts heavy cream and half and half, an egg yolk and parmesan cheese.  So very easy and inexpensive, yet so rich and delicious!  Truthfully, the arugula needed to be used ASAP, as its nutrients were diminishing rapidly.   The vegetable was very straightforward.  Broiled yellow squash.  Below are the final results.


I refrained from posting 'before' pictures, as I like to do, simply because the preparation was so very trouble-free.  While I am one that quite enjoys mincing, chopping, dicing and such....sometimes this sort of meal is a welcome change.

Dinner concluded with a quick walk with the dog.  Upon our return, we made our daily "voyage" through the lobby and rode the elevator.  Her elevator manners have greatly improved.  I am so proud!

Lastly I will depart with a status update on Mr. Lizard (the new toy acquired last week).  I regret to inform all of you that his condition is rather serious....one foot in the grave kind of serious...  It won't be long until he joins the others in the toy basket, all limp, dirty and lacking stuffing.  He was decapitated last night (please feel free to pass along your condolences).  And, by the way, we love fresh flowers and willingly accept those as well!  Here's the sad, poor boy.



As always, the pleasure has been all mine!  I highly recommend running directly to your kitchen to make the parmesan cream sauce....it had me at 'cream'!  It could be used in a variety of ways.  The possibilities are limitless!  Have a terrific evening!
