Have you ever had very good intentions, only to be interrupted by a pesky little notion called 'sleep?' That was the case this evening. I made a pizza, I had planned on blogging about said pizza and then watching my movie. However, now that I say it out loud my plan does lack enthusiasm and eagerness....perhaps that is why I fell asleep :-) Kidding aside, though. Upon taking a three hour nap, I'm sure I'll be up for the rest of the evening. Who knows what could happen. After all, Gilligan was just taking a three hour tour, and where did that leave him?!?!?!
The weather started getting rough, the tiny ship was tossed...you know the rest...too bad I don't possess a fearless crew! Now the Minnow will be lost for certain!
Shall we move onto cooking?!? Anyone? Anyone?? Today was actually summer-like in these parts. I would never, ever complain about such things. I'm not a complainer, ask anyone! :-) Prior to cooking, we kicked things off with an elevator tour....however, it didn't last three hours...thank heavens!!

I kept this evening's meal simple...Friday night does make the perfect night for pizza. And who doesn't enjoy a pizza followed by a movie??? I did enjoy said pizza, but will be saving the movie for tomorrow after that little 'hiccup' regarding the nap-thing!
Barbecue Chicken Pizza Components
Yesterday I received my new Cooking Light magazine. Who doesn't love a great magazine?!?!? They had a recipe for this pizza. I made a few adjustments. We will start with what is not photographed, the crust. I love using naan as a pizza crust. It works perfectly and you don't have to be stressed with yeast and so forth when making your own dough. It was also comprised of red onion, yellow peppers, blue cheese, chicken and barbecue sauce.
This is the part where I indicate my adjustments. Originally, this recipe was featured as 'Quick and Easy'...I changed that immediately! I don't do bottled barbecue sauce. It's over-priced and not very good, anyway. I made my own...making just enough for one single pizza, however quantities could be increased if you chose to use it on chicken or pork or tofu or something completely different. Approx. 1/3 C. ketchup, 1 T vinegar, 1/2 T mustard, 1-2 T brown sugar, 1 T honey, Cayenne, Ground Pepper, 1/2 t Paprika, 1 T minced shallots and 1 minced garlic clove. Adjustments can be made depending on your own personal taste buds. The recipe also called for shredded rotisserie chicken. While purchasing one would have been a joy....I opted to purchase tenders, allowing for four meals for the price of one rotisserie chicken. It just made sense. I dry rubbed it with paprika, cayenne, garlic and onion powder, pepper...a pinch of each, and then broiled it until done. I shredded it for the pizza. Here is the pizza after it was assembled.
It is then baked at 500 degrees for about 10 minutes. I got side-tracked, so mine became a tad bit crispy...but super yummy none-the-less...And I didn't do anything uber fancy with plating since it was just pizza, not that 'just pizza' doesn't deserve something fancy. It does. I had no intentions of offending it in any way, shape or form. It's probably because I didn't have a side with it. I would have, had I not had sushi for lunch!
