Comfort Food in July...an Oxymoron

Well, one might not expect that sort of item on the menu....considering it IS July...and it IS the middle of the summer...and it SHOULD be, at the very least, warm and sunny.  However, today was neither really warm, nor was it really sunny.

Dear Mother Earth,
Pease return the sunshine to the Pacific Northwest where it rightfully belongs.  We have suffered enough through these long winter and spring months.  We have tolerated your rain and your wind, with minimal complaints.  I finally want to wear sundresses and flipflops and bathing suits.  It's the very least you could do.

I'm sure if I can find a 1000 people to back me up by tomorrow, perhaps we can persuade her to return the sun.  Please do your part, as an American!!  As an Oregonian!  Jump on the bandwagon!  Contact Mother Earth.  Let's put an end to this madness!!  What's stopping you?!?!?!

Getting back to the comfort food to which I previously referenced.  I made chicken rivel soup.  Chicken stock along with the lonely vegetables remaining in my fridge, along with scrumptious rivels!  Rivels are the bomb!!  I considered writing an Ode to a Rivel...however, since I just wrote an Ode  I didn't want to overdo things!  I'm all Ode'd out, and my throat is hoarse from all of that singing.

For those unfamiliar with rivels, they are rather simple, amazing creatures.  Some egg, some flour (I added some pepper and a splash of milk)...mix it all up and drop dollops in some hot soup, and *Poof* rivels are born.
Above is a snapshot of the soup on the stove.  Mmmmm, Mmmmmmm good!!  Mmmmm, Mmmmm good!!

I ended up serving it with some chips.  Simple..yet very economical and good for you. 


 It was quite comforting and yum.  I used homemade chicken stock, so the sodium content was kept to a minimum.  I had at least one fan of the soup in the house this evening.  She was on a mission, she made a decision to try and steal some soup!  But, she'd steal pretty much anything that was remotely edible...so I don't necessarily take that as a compliment!  Heck, just last week she ate some dirty, old marshmallow lying in the parking lot.  Soooo sneaky!

"How do I love thee??  The ways are as numberless as my hairs on the rug.  Now get that camera out of my face."

"I just can't deal with the Puparazzi any longer!  Get me out of here!!  The flashing hurts my sweet, brown eyes!  Before long I'll need Botox from all of the squinting!"

She's actually afraid of the camera.  I'm working on that.  After six weeks she now enjoys the elevator...so it'll just be a matter of time.  Thank you, as usual.  Tomorrow I am hoping the weather will cooperate and we can cook food that is more like summer.  YAY!!
