While the kick-off of summer was ten days ago, one would not have guessed considering how horrible the weather has been in these parts. However, today was an entirely different story. The lack of clouds and abundance of sunshine inspired me to make a light and delectable meal….for ONE, with ingredients I had in the fridge, all for less than $3.00!

I got a really great deal on some organic chicken breasts. It has been awhile since I have purchased them, but after my experience this evening, I don't know if I could buy something else. They were lean and beautiful and delicious. I rinsed and pounded the chicken between plastic wrap. I then made a marinade of lemon juice, olive oil, garlic and fresh minced herbs. I broiled it in my beloved cast iron pan. The only thing I love more than my cast iron pan is my gorgeous Le Creuset, but I'll refrain from gushing...I don't want to ruin the moment. Grilling would have been my first choice, but since I don't have a grill, I had to improvise. While the chicken rested, I sauteed the zucchini "pasta" in the pan and topped with some prosciutto ribbons. I served cantaloupe and blueberries on the side.
I know I vowed not to make any additional posts until my camera purchase but I just couldn't help myself. Between the weather and my lack of left overs, I felt I had no other choice than to cook. Inspiration took over. Not to mention, I was excited this dish actually turned out. As you can see from the background, I was joined by my friend "Pink Coach Bag" for dinner. :-) Fortunately she doesn't have much of an appetite.
Again, that you for joining me and enduring, yet another bad photo of a great meal. Maybe that should be the name of my blog...then I could get away without even buying a camera. Hahaha.
E.V. and I are off to relax and enjoy her new toy, "Mr. Lizard."
We had to retire her other toys: Miss Mouse, Waldo and Hello Kitty after an unfortunate incident last evening involving all of them, E.V.'s teeth and my left index finger....I'll save those gory details for another post!
