Getting back to our meatless Monday, so to speak..it was pasta...I have pretty much zero food in the house..with the exception of a few things...so tonight we had pasta and spinach with blue cheese and tomato sauce...I'm all about focusing tonight as well...I feel I really came through this time...you may just end up thinking I was abducted by aliens and someone else is blogging....yes..the transformation..well, it is something you'd only see on Oprah..or Dr. Phil..or a film starring Shia LaBeouf...
Dinner Components: Olive Oil, Diced Tomatoes, Pasta, Blue Cheese, Spinach, Garlic, Crushed Red Pepper and Cream (I forgot the cream in the fridge for the photo...it will take years of therapy, but I am certain the cream shall recover...don't we all????)
Drain your tomatoes...but save just a bit of the juice, just in case...it's going to be a long night!!!
Add olive oil and a minced clove of garlic, or two...Saute for a bit...

Add your drained, diced tomatoes to the garlic/olive oil mixture...
Sprinkle a bit of sea salt and sugar...to your liking, of course....
Proceed to add crumbled blue cheese...again, as as little or as much as you would like..whatever fits your taste...
Once the cheese has melted...stir in some cream or half and half or milk or even a little leftover pasta H20...or even some of your tomato juice...whatever you would like to thin out the sauce just a bit...again...this dish is all about you! That's the beauty!!!!
Turn off the heat and add a handful or two of spinach...allow to wilt...Chamberlain style, of course...
Add your cooked pasta...I was sneaky and cooked some pasta while you weren't looking..hahahahahaha..not really...again, cooking pasta is right up there with making toast...yawn and zzzzzzzzzzzzzz....boring, one might say....a whole lot like telecom and spreadsheets and Gustav Flaubert's first published novel, Madame Bovary (the WORST book on the planet, IMHO, of course)...

Blue Cheese and Tomato Pasta with Spinach
The only thing worse than our jokes would have to be our photos...excellence and Lone Foodie photos are hardly synonymous...I totally blame ghetto cam, as you know nothing is EVER my fault...hahahahahaha...JK...it's usually my fault..yeah, it is..shhhhhhh.....
Again, since all of my photos were crooked as well...I decided to go out on a limb this evening...I took a photo with my left hand...it just seemed like the right thing to do...hahahahaha...sorry...yeah...I couldn't resist...
I shall say good evening...I thank you for checking things out and such...Perhaps tomorrow we shall be rays of sunshine..but that is doubtful, as we won't be seeing the sunshine for quite some time...but I don't mind...when I've got you next to me...Hey baby, won't you look my way...it started with a whisper...everybody talks...too much...Make some pasta and stay tuned...Yup...we'll be returning...in what capacity has yet to be determined, but we will..with Neon Trees!!!!
