Well...bad jokes and ungrateful dogs aside...we did cook tonight...there are few photos...it really was an easy meal to prepare..aside from the mess...beets...they are beautiful...their earty sweetness cannot be denied...however, my pink-stained fingers will attest to the fact, quite frankly, that they are a total PITA to prepare....please join us on a journey...of the foodical variety...and I did invent that word because I felt it was necessary...Roasted Beet Salad with Arugula, Toasted Hazelnuts, Blue Cheese and Dijon Vinaigrette...will someone, please, carry me home tonight...
BEETS!!! They're a little dirty and such..but what can one expect from a root vegetable...we could discuss the taxonomy, if you have the time..I do!!! I shall not subject you to that sort of pain....I'm probably lucky you're here in the first place...
Rinse off the dirt and slice off the tops...place on an AL-foil lined cookie sheet..
Drizzle with Olive Oil...place in a 375 degree oven for approximately 45 minutes....
During the interim...aside from shaking bootie and such...I re-re-re discovered the beauty of the Bloodhound Gang...perfect chair-dancing music...thank you, Jimmy Pop...

I was unable to capture this process...as disappointed as you may feel..it IS OK...you missed nothing, trust me on this one....

Again, aren't they just beet-i-ful...hahahahaha...I made that up....can you tell??????? Sorry...I blame the moon...oh, and daylight savings time...and I don't like the time change..and I am not yet ready to give back that hour...I need it...desperately...can you tell??? Anyhoo..getting back to roasted beets....once they've been roasted, their skin simply peels off like an oversized sweater...the beauty of roasting...now I could go several ways with this..but, it is late...so, I will take the high road..and continue, as this is a food blog...beets...focus...beets...
Peel and Dice your beet..I made three, but only used one...so later this week we get to have beets again!! Yay for us!!! We're about as lucky as you...which is merely embellishment...in case you haven't realized...

Yes, my internet friends....that's what I've got on a Saturday night...One can imagine your expecations were set much higher, as were mine...but it's been a long day...You know that I always have an excuse..hahahaha...and I have zero new toys...which is disappointing...we continue to work on 'Operation East Coast' even with our pink, beet-stained fingers....go make a beet salad...beets are just delicious..again, that earthy sweetness...zero regrets...aside from the funky colored fingers...they can't be 'beet!' hahahahahahahahaha....Spring ahead, I suppose...we don't really have a choice.....I'll bring home the turkey if you bring home the bacon!!!! I'm a lot like you...I think I'd be good for you and you'd be good for me...
