Alright...we're focusing this evening...it's what we do best..teehee...Before we delve into the cooking part...I would like to take this opportunity to give a shout out to my awesome neighbor! He graciously and fearlessly saved me from the world's largest spider...It was lurking in the hallway...gigantic in nature...If I were to make an educated guess...he had his own time zone...he was THAT big..and gross and ICK...But, my clever and kind friend saved the day...YAY!!! I believe that even Mothra would have been fearful..So, thank you...for saving the day...and night...my sweet and generous neighbor...and now I don't have to move... I only hope you're not having second thoughts...just kidding...I've kept the music down... ;-)

Spiders, and ma'ams aside..I did lots today!! It was Sunday...I had a schedule which was free and clear of obligations...so we took full advantage.. I did have the pleasure of speaking with a certain hot investigator whom resides on the east side..shhhhh...it is scandalous for him to be associated with a west-sider... WE BAKED...made scones, as a matter of fact..
Flour, buttermilk, crystalized and fresh ginger, sugar, butter, baking powder and soda, lemon...
We mixed all of the ingredients together...in a bowl..go figure!?!?!?!?
See...I was NOT kidding...mixing was necessary...and I was up for the task...I'm no quitter...nope..not one iota!
We then had to cut scones into little petite triangles...It's all about the little things...Good Charlotte says it best....
After they have been cut up...they are baked...in a 400 degree oven for approximately 20 minutes...
Baked scones then necessitate a glaze of sorts....sifted powdered sugar, cream and ginger....
The Glaze!!! It's awesome and sweet...like chainsaw jugglers one might say...
Here are the final scones! A baking success...my first in years...and the apartment complex is still standing...and my eyelashes and eyebrows are intact....a good day in my book, and I have a book....it has owls on it..it's a hoot, as a CSJ would say..he knows best....
Ginger-Lemon Scones ala Lesley...

I felt, for once, compelled to heed her advice..so I will keep my mouth shut and progress ... Ah, yes, dinner...Cajun catfish, remoulade, slaw and corn...
Catfish with Cajun seasoning..coated in cornmeal and fried...not in the skillet of justice, if anyone was curious...
Cabbage...of the pre-packaged variety..please do not judge..I am physically unable to shred cabbage...I even have a note from my doctor supporting this claim...for reals! Add ketchup, sugar, cider vinegar, mayonnaise and pepper..yum! Exactly like chainsaw jugglers....
Cajun catfish, slaw and corn...tonight's meal..the remoulade and lemon were absent for the photo..oops..
Thank you for joining us this evening..It has been fabulous...as is a certain chainsaw juggler...magical...one might say...Be sure to branch out..make scones...I screw up everything and see what happened...miracles never cease..we'll be here tomorrow...yep..please don't call the police, we mean no harm....I swear!
