Tension is still high on 'The Wall'....and yet another confrontation of sorts went down today. One of which I was fortunate enough to witness...nah..more like unfortunate to witness. Again, I was wincing and wishing my magic pen were in my hands..I should know better than to go anywhere without my magic pen. It's magic...and it's a pen...and it has a magic tip..I still love it..and everyone at 'The Wall' wants a pen like mine...They love my new pen. They all have pen envy...sorry...sometimes one cannot let things go... The dynamic which has become 'The Wall..' is soo bizarre...I continue to blame the heat, the full moon, and the mental instability of all...myself included. tisk-tisk..
"Shall we wrap up this mindless banter, Mama...I would rather see you dance with your new magic pen than continue on with this conversation...and buttons???? Seriously??"
She's still a work in progress, well, much like her Mama..she just needs to lighten up...literally and figuratively..shhhhh....I didn't say that out loud....I would never be forgiven...
Alright...where were we, my friends...cooking something one would imagine...Ah, yes...I had gotten off track...between buttons and tips and chainsaw jugglers, it has been a crazy, albeit TERRIFIC TUESDAY. So we made Tortilla Soup...mostly because it began with a 'T' and would fit in well with Terrific and, yep, Tuesday...so it is TERRIFIC TORTILLA soup TUESDAY. And we can't forget that guy.... I'm always thinking..and one step ahead of everyone else..well, except for law enforcement officals..I'm kidding...seriously, I am always thinking..but that's how gals with pink capes roll on the west side of town, in case you were inquisitive about things of this nature.. I know I am!! As I have digressed...we did prepare a chicken tortilla soup and it was super-duper yum..about as yummy as they come, except for...hmmmmm
This evening's soup ingredients:
Chicken stock, shredded cheddar, tomatoes with chiles, shredded chicken (tossed in mexican spices), onions, garlic,
cumin, cayenne, paprika and oregano...
The dish begins with slicing up corn tortillas...easy and, well...it's easy...and simple...
Once your tortillas have been sliced, you fry them in oil...they eventually play an integral, and scrumptious
role in this soup...trust me on this one, folks...
The grease odor will undoubtedly offend every neighbor on your floor, but it's worth every moment....they are soo tasty...Make extras, so you and a special E.V. can eat some before the soup has been completed...mmmmm..delish!
Here are crunchy and delectable tortilla strips, of the crispy variety..you would have them no other way...trust me...
After you have made your crispy strips, you need to make the soup!
Begin by browning the onion and garlic..add chicken stock and a can of diced tomatoes, mexican spices, a splash of lime juice and a handfull of your crispy tortilla strips..and commence with the simmering... simmer away, baby...for thirty minutes our so.....
Once the simmering has come to a halt...it's time to whip out a major appliance...tonight it is the blender..can I get a round of applause for this special blender???? Two consecutive nights in the kitchen appearance department..and totally worthy of at least a little finger clap, no????
Pour your soup contents into the blender...and blend away..It's fun...trust me! Have no fear! Wait... I retract my fear statement...and interrupt this jovial moment with my PSA for a Tuesday....Keep in mind this soup is extremely hot...extremely...The splatter factor from blending hot liquids depends on how hot of a liquid you are blending...the hotter, the more it splatters..all over your kitchen counters...so use tremendously hot liquids with caution...and be sure to have a dish towel handy for messes...they're not just for dishes, my friends! I'm here to help...I speak from experience...I do not kid...and I kid you not...
PSA's aside...once you have blended your soup...return your soup to another pan and add your shredded chicken and reheat. I could have sworn I had a photograph of this step, but cannot seem to find it...no worries..it won't be missed...
"Ummm, Mama, I beg to differ...get your act together...how difficult is it to organize photos...And hurry up with the soup..I'm hungry!" She's my biggest critic...I see a joke in that statement, however it is late and I really dislike making jokes at her expense....maybe...
The soup is plated..well, it's not technically a plate, but a bowl since it is soup..in two steps..Step 1:
Begin by layering your crispy tortillas and grated cheddar cheese in the bottom of your bowl...Keeping in mind, more cheddar is better...It is...and catchy! Yet another mindless observation...
Step 2 is my favorite..well, technically it would be Step 3...eating of the soup...but, yeah...anyway...
I was losing daylight and had to take things outside on the veranda (sorry CSJ)...I tried..but this evening was crazy!!! I topped with sour cream and guacamole..you could add cilantro (however I have previously spoken about my disgust with cilantro..so I'll spare you the pain of reliving such discussion). A lime wedge would have been perfect..but the Fred Meyer didn't have any..what store does NOT have limes???...oh, well...I got over it..
As I enjoyed my soup...which was really tasty...and super spicy...hot and spicy.. hmmmmmm...perfect ending to a perfect day..I hung out with my super-cool, new, magical pen, Quinn, in my office...she loves dancing..and being super-cool, and having magical powers....and being glittery...she rocks!
