One Nation Under Dog...

Yikes!  Friday was crazy!!!  In fact..it has been a crazy week...a crazy month...an insane year...THANK GOODNESS it's all about to end...I'm so over this  year and this week and this day and so many other things..we ate soo late..then took a brief moment to re-group, so to speak...and the next thing I knew it was 3am..oops..Well, like I said..it's been a long year..I could be all sentimental and take a walk down memory lane...but, I suspect these 'memories' are so horrific that one would be inclined to run full-speed ahead down this alleged 'lane' of the memory variety...merely to escape...the Bloodhound Gang says it best...lift your head up high and blow your brains out...hahahaha..I am so totally and absolutely kidding..but that song is a total HOOT!

"Oh, my dear Mama....you say hello...I say FO...why do you think I'm in the back seat today???  hahahahahahahhaahaha....Well, it might also have a teeny-tiny bit to do with the fact you're a terrible driver...Just sayin' and such..."

Again, she is quite the drama queen and not necessarily all that nice at times..she's just mad at me....we were out walking and apparently someone didn't like the burrito they had been eating because they threw half of it in the gutter...and I wouldn't allow her to eat it...it actually was quite humorous...I so wish I had my camera with me...this lowly half-eaten burrito lying in the gutter...ahhh..the little things, no????

We should move along to the cooking portion of our evening..it is our only reason for being here, is it not???  Again, it was a Friday night...we had no where to go...no one to see...nor did we really have anything better to do...no worries..we had great conversations and tunes from my trusty, good, old The You Tube..shall we begin....Triple Citrus Glazed Salmon with Lemon-Parmesan Risotto and Sauteed Kale...here we gooooo.....!!

Risotto Components:  Risotto, Chicken Stock, Cream, White Wine, Parmesan Cheese, Lemon Zest, Butter and Shallots...AND Parsley (not photoed)...I actually remembered to buy parsley for once, then I totally forgot to include it in the photo..which caused hysterical laughter...so either I'm a WIP or a Train Wreck...I'm on the fence about this one, folks...

Would any Friday night be complete without a little mincing...seriously???  Does it get ANY better than that????  Hmmm...Yup..it does, actually...However, if it's any sort of consolation...it was a zero band-aid evening...that's always a plus in my hoot-owl notebook...

Saute your minced shallots in some butter and then add your risotto....saute away....do not be afraid...you won't be paid...but you can totally shake a little bootie...say a prayer for the family...we were actually back on Good Charlotte again...it's so totally that Joel Madden's fault..yup..he really shouldn't be allowed to be so cute....nope..I object!  hahahaha...not really, I actually strongly encourage this cuteness to continue...hahahhahaaha...

Once you have sauteed and such...add some wine and chicken stock...then you get to simmer...SEE there are so many exciting things going on this evening..how often can you saute and simmer and shake bootie..all in one evening???  THAT'S what I thought, my chickadee!  Regardless...simmer for 25-30 minutes adding stock PRN..and I did have one lowly photo of this simmer process...I'll be honest...it sucked...it hit that cutting room floor...again, with Puck and Darren..patiently awaiting my arrival...tisk-tisk...

Once the simmering has come to a screeching halt and you're all finished....add grated parmesan cheese, a little lemon zest and PARSLEY...Yay for parsley!!!  I'm just being a little overzealous and dramatic..I'm quite certain parsley doesn't exactly deserve a yay...well, perhaps a little one...it doesn't really have much flavor..but it is cute as heck!

Now we shall delve into the preparation of our salmon and citrus glaze...salmon is slammin'....fo'sho' my friends, fo' sho'....I speak from experience, in both departments, of course...tisk-tisk...

Rice Vinegar, Honey, Olive Oil, Chicken Stock, Butter, Salmon, Lemon and Lime and Orange Juice...ever see a better looking lime??? hahahahaha...I also forgot to buy a lime...big shocker, I'm sure..fortunately I had a fake, plastic lime with fake, plastic lime juice inside..yum!  hahahahaha..nah..it wasn't that bad..you only need a teeny-tiny bit..

Now, there were photos of the tri-citrus sauce reducing..and I had lots mostly 'cause I had to make two batches...I can't seem to find them and I got distracted and the first batch burned..and, in my own defense...it was totally Joel Madden's fault...yup...Anyhoo...add the citrus juices, vinegar, honey, butter and stock..and reduce...boil for approximately 20 minutes or so until it is thick and syurpy...much like your speech after three martinis...hahahahaha...I'm so kidding..I only had one...maybe...

While your sauce reduces...brush your salmon with olive oil and add some crushed pepper...broil until browned...pour your citrus sauce over top and place under the broiler for a few more minutes...to allow things to caramelize and brown and become beautiful...

AND, again..since it is a Friday night...and you've got some free time...work on a little garnish..I opted to make a few citrus curls...now, my method may be a little unconventional..well, that's fancy-pants talk for ghetto...and thank heavens for office supplies!!  woo-freaking-hoo...wrap strips of orange and lemon peel around skewers...allow to dry...this really was kinda, maybe, sorta a PITA..but they ended up being so cute....and, yes..wrapping them around that little skewer was not as easy as one might think...profanity was used three...well, perhaps five times, at least...and that is really hard to believe considering I am usually such a patient individual...almost saint-like..hahahaha.....shhhhhh...

Kale...I secretly wanted spinach again...but I figured people were sick and tired of my spinach..so I opted for another green vegetable..I love kale...saute in butter and chicken stock...at the very end, once it was wilted, I sprinkled with a little crushed red pepper...it adds a little needed color apropos for the holiday season...and a little bit of a flavor kick..that type of kick is way better than literally kicking someone..although, I really wanted to do that today....shhhhh....

Our final salmon..with tri-citrus glaze, risotto and kale...for the record..salmon is slammin'!  hahahahahaha...you sound like you're from the UK..are you in a band like Oasis or Herman's Hermits???  hahahahahaha...

Well, our evening shall now come to a close...however..given my impromptu 'nap' it's closer to the early morning..and this year soon shall come to an end...that deserves a little finger clap, no doubt...We can only hope for uninterrupted prosperity..and perhaps we can discuss our resolutions for the new year and the impact they will have on our lives..OMG...hahahahahaha...I'm so totally kidding...I have yet to keep any resolution I have ever made...well, except for that one where I vowed to to consume more vodka, and trust me, Monopolowa is quite pleased with my commitment..tee and hee....only love lets us see normal things in an extraordinary way.....I got a rock-n-roll life, too..shhhh....See y'all later my chickadees....G'night...

You've Got A Face For Radio...

Ummm..yup...I believe it would behoove those whom possess this 'Y' chromosome to be a little more mindful with their words..as things that are said are not necessarily interpreted as compliments..for the record..regardless...I've totally lost all faith...Oh, and don't even get me started on this rain!  I KNOW it is Portland..but does the wind have to blow as well..it totally makes you rethink dog ownership...it has been a soggy evening!  BTW...although the temperatures are relatively mild..flip flops are a rather poor choice..unless they have cleats...and I'm certain none of you own those...as I do not...it has been a miserable evening over here on the west side...perhaps that is how I'll make my millions...flip-flop cleats!  Fo'Sho'!

Soooooooooooo...a rainy Thursday calls for some food...of the delicious variety, no doubt..Yup...it so totally does..fo'sho' and such...This evening....my internet friends..we have the perfect collision of the potato chip and the mashed potato...oh, and wait..it does get better....it is accompanied by steak..and bacon..and...insert a gasp here and such...SPINACH!  My new favorite food..I really have no idea why I'm so into spinach, but I guess that's better than crack..or Colt 45's...or bon-bons...cute boys......or Manischewitz...hahahahahahaha...Please join me on a journey...where a crusty potato galette meets up with a sassy tenderloin and they settle down with a little wilted spinach...it's a hoot!  I foresee a musical in the making...or at least a soap opera...but I have ALWAYS been a tad dramatic..just a tad..shhhh....

Spinach, Olive Oil, Sherry, Butter, Garlic, Parmesan Cheese, Fingerling Potatoes...there are chives in this photo....I didn't use chives...I have nothing against them..for the record..nor am I quite certain as to how they ended up in this photo....
good intentions, maybe....again, hard to say...

It is time to make a little compound butter to put atop your steak...I made this butter with parmesan, parsley and garlic..and I had zero regrets...and can you even guess what I did while creating this butter???  Yup....bootie shaking, no doubt...we were soggy and wet and cold and our feet were freezing...and again, flip flops are a poor choice and I did wish I were 2000 light years away....but it was a perfect evening for a homecoming..and the last of the american girl...I always have suggestions...

Pepper-crusted, bacon-wrapped tenderloin....whom happens to be a fan of hyphens...hates long walks on the beach and intimate conversations, but loves macrame and red wine...at least according to his match.com profile...tisk-and-a-tee-hee...

After the steak was seared....two and two on each side..as we have discussed a multitude of times...and I shall refrain from the boring Chuck Woolery-type details..we sauteed a bunch of spinach....I have this hunch you will want to munch on this bunch..although it does lack crunch and is not offered for lunch..but I can throw quite a punch..so zip it!  Then shake bootie to Raindance Maggie...Heyyyyy, now....

Thinly slice fingerling potatoes, or any sort of potato...they all work for this dish...the beauty of flexibility, no???  tisk-tisk....and tick-tock...Toss with melted butter, garlic and parsley...and again, since I am a failure and always forget to purchse fresh parsley...this was of the dried variety...please do not judge!  Only Judge Judy is allowed to do so...and she's so sassy about it..IMHO, of course...

"So, Mama...Do YOU know what weapon you can make from potassium, nickel and iron???  a KNiFE!  Get it!?!?!? hahahahahahhaah...I'll stop now..I'm tired and I just really wanna lick the butter off of this wrapper.."

Layer your sliced potatoes into a pan or a dish or into some sort of heat-resistant 'thing'  Again, I really am so technical with these culinary terms and such..regardless...you'll need to bake these potatoes...400 degrees for approximately 20-30 minutes..it depends on how many layers you have created..I am rather simple...so I only had a couple of layers...hahahahahah..

This is how a galette appears after it has been subjected to heat and ovens and such...A generic French term used for a flat, round crusty cake...it is hardly round..well..kinda, sorta...I did try...and we've been through my inability to relate with the French language...aside from the kissing, of course..hahahaahhahah..so again... I know of Pepe LePew and I can say 'Oh, la, la' and that truly is the extent....Jesting aside..I did like this...it was tasty...


Fingerling Potato Galette, Wilted Spinach, Bacon-Wrapped Tenderloin with Parmesan-Parsley Butter...delish!

Yay for a Thursday...haahhahahahah...SO totally not! And I am as positive as an electron with that statement...fo'sho'!  Kerplunk....Do you know the difference between chemistry and cooking???  In chemistry, you should never lick the spoon!  hahaha..word to the wise, my friends...you almost escaped...and again, I almost quit listening to this awesome band from Texas..although nothing great ever comes out of Texas...and I wish I would have had the nerve to do lots of things...I almost forgot to say something else...but again...I was able to speak with an amazing and sassy gal...and that is awesome with a big, ole' "A"....Oh, and make spinach...we all could use a little more Fe in our lives...do not be Fearful...at least we are not feebleminded..and for the record...we Do have a face for radio and television, you jerk!  G'night my internet friends...we shall return...a December to Remember..no doubt!  And OMG..for the record..Sweet Caroline and Puck....they shall never become old..and he does have the voice and a body of an angel...not that I was looking or anything.... ;-)

Frankly, Scallop, I don't give a Clam!

Can I get an LOL..and maybe throw in an OMG...and I can so get away with that because, in case you forgot...and I am here to remind you..I am BA...but only IMHO...I'm so totally JK...IDK to where my mind just wandered...but it was fun...I suspect it was frolicking off in the land of acronym...in fields of daisies and sunflowers and tall grasses and such...I think I may have even skipped a bit...and was carrying a basket...where I did LMAO..maybe..it's unconfirmed...hahahahaha..I'll stop..although it IS fun!  And I so totally loved Gone With The Wind...so much that I could not resist the horribly horrific joke...Scarletts, scallops and clams and damns...it's all relative, is it not???  Joking aside..Margaret Mitchell should get a little finger clap, at least...heck, it can't be all that easy to win a Pulitzer..

Again...we shall move along..I really need to work on my proclivity for wandering way off track...food was cooked...food was consumed....we're having a bit of a boy and toy dry-spell, so to speak...so no boys, nor toys were involved in this evening's blog...and I would never, ever think of combining the two...Yikes!  hahahahahahahaa..I AM SO kidding...about the combination of the two..not the dry-spell...just to clarify..soooo, anyhoo.....Scallop Piccata with Wilted Spinach and Angel Hair Pasta...

Scallops (coated with flour and wrapped in bacon), Lemon Juice, Capers, Sherry and Butter

Spinach, Pasta and Garlic...they go rather handsomely with scallops..not that I know anything about anyone whom may, or may not be handsome...I typically never, ever notice those sorts of things..nope...for reals!  hahahahahaha..

Sear your scallops...Two minutes on each side..much like a steak..Chuck Woolery-style...yup!

Once the scallops have been removed, deglaze with sherry..add butter, lemon juice and capers...the photos of these previously mentioned events, much to my chagrin, were utterly hideous..shocking, no???  I tried...WIP..my friends...total WIP...regardless..once you have added those other ingredients and did things such as deglaze...OH...now waiiiiiiiiit a minute...shake some bootie...it is a MUST...totally necessary...dinner will be a complete and total failure if you do not....can't keep my hands off you..especially when you're dressed to kill...LOL...Billie Joe and Puck!!  Where are you???

Once you have wilted your spinach add your cooked angel hair pasta...the pasta was named after me...yup..it's for reals...it's on The Google....light, thin...hahahahaha....that is SO untrue...I only wish..tee-hee...I made that up..can you tell???

The final meal...Scallop Piccata...only we didn't have parsley...because I ALWAYS forget to buy parsley..and I forgot shallots, although I did have those..but, isn't it beautiful????  Have I piqued your interest..tisk-tisk..

So, um..yeah..three of the greatest words EVER...they can encompass a multitude of situations...tonight...we have embraced the fact it is a Wednesday...we continue to reside on the west side..we had zero jokes..well, maybe one or two...but..again, I shall move along...make an untraditional version of picatta...sassy girls rock like nothing else..as does Gone With The Wind..it has truly been a terribly long day..I look forward to tomorrow...With enough courage you can do without a reputation..Yup...and I so wanna play the cowbell like Will Ferrell...just sayin'!  G'night!

Alexander the Grape...

Holy Guacamole!  I do love guacamole with chips, yup...but that is so beside the point..it actually is a less profane way of saying holy crap...a phrase one uses to express astonishment..the way one reacts to a shocking surprise that is preposterous..and you all know I would never dream of using profanity..I just wanted to make myself clear...of the crystal variety, no doubt...today was incredibly awesome and crazy and words cannot begin to explain..and I am STILL laughing...and I totally blame Will Farrell..I promise I'll stop..for reals and everything..

"So, Mama...how many guacs are in a bowl of guacamole???  Avacados Number!  hahahahahahahaha...get it????  Oh, boy...I really DO crack myself up!!!  If you have any problems, feel free to call 602-1023.  I'll be here all night...hahahahahahaha..get it???"

We should proceed to the highlight of our evening..I use the term 'highlight' rather loosely...so please keep that in mind...it is us..and it is the west side...and, remember, it IS only a Tuesday night...has anything spectacular ever occurred on a Tuesday night???  Maybe in early November when they hold elections and such..but that doesn't count...it could, I suppose..anywhoo...how did I venture so far off this path of focus???  Yes!  Cooking food and that sorta stuff...yeah..we do that from time to time..have you noticed??  Um.... Creamy Polenta with Chicken Sausage and Roasted Grapes...Grapes are Great...like cheese...tee-hee...

Chicken Stock, Butter, Grapes, Shallots, Corn Meal, Chicken Sausage, Thyme (things changed up a bit...I didn't use the white wine, but sherry vinegar instead..I also used parmesan cheese and forgot to place the cream in the photo...)  Please don't judge..I forget everything!  I just get lost in my mind...It's a disaster up there...those cobwebs...ick!  I hate spiders!!

Sear your sliced sausage....sssssss...it's sassy...saucy...soothing...shake bootie, even..that time of the evening has come, has it not...it should be expected..should I have been more subtle...sorry, I suffer from surexcitation..I'm sure you do as well..especially after tuning into this blog...it's only logical and such...Then deglaze with some stock...I would never omit an important detail...nope...

Once you have deglazed, add grapes, minced shallots and a few sprigs of thyme...but only if you time for such things...tisk-tisk....yeah..it's been a long time...and I love that Cake song, BTW...it HAS been a long time...since I've seen your smiling face...since you've given me butterflies.....since I've seen a suh-uh-uh-uh-nnny day...

Her patience has so totally worn thin...I blame holiday stress...totes...We should talk about polenta..who doesn't wanna talk about polenta???  I know I do...after all it is a boiled dish made from cornmeal...what could possibly be more enthralling than something of that nature???  Yup...that's exactly what I thought...you don't even have a retort to that question, do you???  At this point, just talk to the hand...hahahahahahaa...I'm kidding....I understand....yeah, I, too, get all worked up over polenta...shhhhh...it's a secret..

Cream, Chicken Stock and Thyme...(I'll be nice, I promise..)

Once the liquid comes to a boil...add your cornmeal...as the excitement builds....yes...and it IS exciting...but not nearly as exciting as the discovery of the fundamental unit of all organisms...biological cells...can we get a little finger clap for Robert Hooke????  Well, for Mr. Hooke and microscopes...they are fun and such...they are..for reals!  Oh, and maybe a little finger clap for Will Ferrell...he's a freaking hoot and can so totally rock the cow-bell....!!!

Once the polenta has thickened..add parmesan cheese and a little butter..whisk..whisk away...now IS your time to take whisks and such...tee-hee....just don't take my whisk...I'm rather attached...we've been through so much...and if he were to disclose the details of my whisky behavior...hmmm..yeah...keep your hands off my whisk...and my girl....yay Good Charlotte! Actually I would prefer a little Motivation Proclamation instead...it's a way better song, IMHO...but how did we even end up at this point??  I'm still puzzled...we should just have a gin and tonica...hahahahahaa...

Our final meal....I had few photos this evening...yet I DID manage to drag this thing out...It's a gift..yup..hahahahahahaha..or a curse...I suppose it depends on how one views this situation....tee-hee....

Polenta with chicken sausage and roasted grapes...I really liked this...it was really great...I'm really liking these roasted grapes...they're grrrrrrrrrrrrreat!!!!  The oven does something to a grape..I cannot explain, yet I can not complain...could anyone be more eloquent than that????  hahahahahhahaha...yeah, they totally could.. I just know it!

Well, my friends...at first I was afraid, I was petrified...but then I sucked it up and got over it...isn't that what we should always do???  The sun has gone down and the moon has come up...that means it is time to bid you adieu...farewell, even..I've won the battle..you've yet to fight..and being the victor...I bid you goodnight...and good luck taming THIS shrew...hahahahahaha...sorry...I couldn't help myself...but then again, I never could...g'night..see you all tomorrow..I can't wait!!

Can I get a GIGANTIC OOPS, please????

And make it snappy...chop-chop...I don't have ALL day and such..OMG...Will Ferrell is my HERO...I found him playing cowbell with Green Day to East Jesus Nowhere on SNL...one of THE greatest things I have EVER seen...I LOVE, LOVE, LOVE you Will...and that was AWESOME!!!! That's gotta totally be one of the most incredible television moments ever...I am still laughing...Well,  I laughed hysterically over that and my gigantic OOPS tonight..I suppose it was bound to happen sooner as opposed to later, and it involved my phone..and texting...my PSA this evening...be sure you know whom it is you are texting before you hit that 'send' button...I'll leave it at that...this is a family blog..I don't like to go into specifics..however.I am STILL laughing...hysterically....I am SUCH an idiot..and have you EVER seen soooo many caps in one paragraph?????  Didn't think so....Welcome to My Life...yet another great Simple Plan song...tee-hee..and an amazing coincidence, no???

"Oh, Mama...ouch!  I'm still cringing...can dogs even cringe???  I suppose they can be embarrassed or uncomfortable in reaction to something so discomforting.....I think I even may have flinched!  Recoiled even...Winced....only YOU could cause that...fo'sho'...But I still love you...flaws and all..that should totes be our new bumper sticker!"

We'll forget the earlier part of our evening and focus on what is most important...FOOD!  And cooking and shaking bootie and such...where else can you get ALL of that, and then some????  Well, I COULD use someone tall, dark and handsome..but that is totally beside the point!  hahahahaha...That's EXACTLY what I thought..and this evening, I'm stuck on CAPS!!!  hahahahahahahaha...no hyphens or acronyms..it is ALL about the CAPS!  And not of the beanie variety..in case you were wondering...tisk-tisk...Tonight was an experiment..sometimes a gal's gotta think outside of the box..otherwise she gets stuck inside the box....besides I had a bunch of grapes..they coincidentally go well with chicken...lucky you!!!  They also go well with couscous, BTW...in case you were wondering...

Vegetable Couscous...Carrot, Onion, Garlic, Thyme, Butter, Peas, Toasted Cashews

Beat the living crap out of some cashews...you'll have zero regrets...trust me on this one....again, I DO know my stuff...regardless, beat them then lightly toast them on the stovetop...talk about mixed signals...hahahahaha...they never complain..no worries!

Remove the cashews and add your veggies..saute..saute away...totally shake bootie...it is a Simple Plan...and it is right...and you will be a better person for this behavior..you will...I can't keep my hands off of Puck...or Darren...sorry to anyone I offend..but I can't help it..nope...

Add couscous and chicken broth...simmer..baby, simmer...it is a verified food preparation technique..so it is a-ok to do so..besides it does ensure a gentler treatment to your food...it is efficient...and appropriate...must I go on and debate this topic any longer???

Once the simmering has ended..as all good things must come to an end...add your toasted cashews and some peas...I LOVE peas...they are the bee's knees...for reals!  And I can only imagine they are good for you....they are a vegetable and such...don't quote me on that....well, maybe you can...I guess...I do like being ambiguous...sometimes...but only on even days...is that odd???  hahahahahaha...

The final vegetable couscous...this was SO good....It really was...I'm not one to lie...but I still want one of Rivers' fruit roll-ups...it's totally HIS fault...

Geez...talk about a drama queen! 

So, um, yeah....how do all y'all feel about chicken??  They go well with crickets, I believe..and...I'm pretty certain I'm hearing crickets right about now and crickets taste like chicken...wild guess..

Chicken, Grapes, Lemon Zest, Garlic, Olive Oil, Crushed Red Pepper, Herbs

The marinade.....it goes by one name...it's like The Rock....I love him!!  Only I don't think he even goes by that anymore..

Alternate skewering chicken pieces with grapes...marinate and then broil...it WILL make you a better person...it will...and Will Ferrell STILL rocks in my book...he is a complete and total hoot, and totally rocks the cowbell...hahahahahaha

Our final meal..yup..we did manage to make it to this point without incident..well, there were a FEW of those..incidents, I mean...but, again, this is a family blog...I can't really go into detail....well, and for legal reasons as well..tisk-tisk...

Here is the 'behind the scenes' part of the meal...I love skewers, but they never plate well..so this is what I ate...It really was great!  I loved the broiled grapes with the chicken and couscous...I would make this again...without question...quite tasty!

Ummm...I suppose anything that is successful is a always a series of mistakes, is it not???
