A Very Merry Mimosa Christmas....

Now waiiiiiiiiiiiiiiiiiiiiiiiit a minute....I want you to know...You been so good to me..You been so good to me...so I shall return the favor...it's only right..and I am so thoughtful and kind and such...yup..and it IS Christmas...So I shall share my day...I can't help myself..and I can't keep my hands off you...and you so totally don't want to know what I almost did..nope..trust me....moving along...

Ta-dah...the Christmas Mimosa...have you ever seen anything more gloriously delicious???  Champagne and orange juice...a dynamic duo...a heavenly combination..like peanut butter and jelly..hotdogs and ketchup...chocolate and marshmallow...the Lone Foodie and Puck..I KNOW it was only 11 am..but it IS a holiday..
we all need to indulge at least once a year....tee-hee...

AND, a cocktail would not be complete without an apropos napkin...it's like wearing a sweater-dress without the right boots..it is, for reals...trust me on this..I am an expert on both the sweater dress, and boots..these napkins caused hysterical laughter..seriously..who does NOT appreciate a great acronym..IDK...LOL...flash forward..me in 30 years..only I don't 'do' bangs very well...although, banging...is a different story..it is Christmas...I'll keep my mouth shut...Yikes!!  JK and I am BA, BTW...IMHO, of course...Where were we????

We are about to venture on a journey...and NOT the Twilight Zone...although they are quite similar in nature...a journey into the Christmas Eve brunch...aside from mimosas...we had white cheddar cheese and chive mini quiche, cream cheese pancakes with maple buttercream icing, fake bacon, croissants, grapes, goat cheese and roasted fingerling potatoes...Some of which I did cook...I have documentation...proof even..for reals!  Please don't run away...it won't be that bad..I promise!!

Quiche components: puff pastry, cream, eggs, butter, chives and white cheddar cheese. 
Salt, pepper and cayenne (not photographed)

Whisk your cream, eggs, salt, pepper and cayenne...Again, you do know I am a whisky kinda gal..tisk-tisk..sorry..and I even do like whiskey..but that is beside the point...TMI, fo' sho'....once those ingredients have been combined..add chopped chives and grated cheese...as we all know cheese is great...I promise to stop...seriously...

Roll out your puff pastry and cut into squares...place into your mini muffin tins..now, I will be honest...this step SUCKED...this is why I don't make pies or pretty much anything which necessitates the use of a rolling pin...it's just irritating..regardless of how much flour I use...everything sticks to that stupid rolling pin...my PSA tonight...rolling pins SUCK...sorry..I meant no offense torwards any rolling pins or their family members...now if they could rock as well as they roll..then that would be a completely different story...merely an observation...

Fill each cup with your egg mixture..bake at 400 degrees for approximately 15 minutes...

The final, plated mini puff pastry cheddar cheese quiche with chives...they were awfully delicious...
and BTW, there was nothing quick in this preparation...

What's shakin', fakin' bacon????  HAhahaahahaha
This is SO good..and I love real bacon..but fake bacon does rock...

As usual..she's not very nice at times..and we should move along to our cream cheese pancakes with maple buttercream icing...I sorta, kinda, maybe made this recipe up on my own...I have too much time on my hands and an over-active imagination..I am a WIP...as I have always professed..and these proclivities and afflictions..are what cause me to shake some bootie...to none other than....Bing Crosby!!!...hahahahahahahaha..so totally not!  I am simple minded...I planned it this way..tisk-tisk..nah...shall we say I can't keep my hands off you...and I really want a fruit roll-up...a homecoming of sorts..for the american idiot...on this holiday..celebrated with my sweet caroline...Yup!!  Get it???  My riddle for this evening...I almost went bowling....hahahahaha....

Pancakes: Cream cheese, cream, flour, butter, egg and baking powder..

Mix...be sure to not over-mix...it makes for flat pancakes...I am rather certain their is a scientific or foodific reason behind this...but I am too tired to consult The Google..and I was too busy being the homecoming queen...just trust me on this one..I speak from experience...as I frequently do, much to your chagrin I am certain...

Maple Buttercream Icing...is the bee's knees...the ultimate sugar rush on a multitude of levels...and the ONLY action shot of the night..I tried...for reals...10x sugar, butter, cream and maple extract..whip away, my friends...it is fun...like Devo..When a problem comes along..you must whip it!  hahahahaha!!  LOVE them!!

The final cream cheese pancakes with maple frosting...I had to quickly snap this photo...the pancakes were warm...and the icing was melting...about as rapidly as Frosty the Snowman in rising temperatures... Darn that Global Warming and climate change...I guess Al Gore was right...there are no signs of cooling down..but I am pretty hot..hahahahahahahahaa...

Merry Christmas my friends....E.V. may appear to be held against her will...but she really isn't...she loved every minute of this moment..tisk-tisk.  I love my new tattoos...and I love this blog..and that you have tuned in...and mimosas..and especially mini-me's...and boots and knee socks..and cute boys...and the world tour 2005..and we've got nowhere to go, no one to see and nothing to do tomorrow..so watch out!!!!  That's secret internet code for..we'll be back tomorrow....oh, no you didn't!! yup!!!  hahahahaha...and have a terrific holiday!  G'night...We're off to enjoy our ghetto Charlie Brown Tree ;-)
