Being a slammin' single gal, (teeheeteehee), I have been exposed to new technology to which I never knew existed. Case in point...this whole You Tube thing. Awesome! I can listen to tons of music. Tonight....ODB....(I have not yet outgrown the acronym phase..and they are a part of Wu-Tang). Shimmy Shimmy Ya....A GREAT song, a great album... My neighbors continue to hate me...in case you were wondering. But you gotta give it up to the Wu! Personal note: Not an appropriate wedding reception song...I speak from experience, but yet this is why one does not get married. Merely an observation...
I decided to become a responsible citizen and focus on my point...so I cooked. Not that I wasn't..I vote, pay taxes, work, volunteer, what is expected. However, if you were wondering, I made a reverse chicken parm with pasta. Total experiment...at least it turned out....
Here is my sauce:
I cheated and used a can of tomatoes. My bad. Shhhh..We're keeping that on the DL. Word on the streets is that the heirloom tomatoes are not quite ready, so I had an excuse..but then again... Sugar, soy sauce, balsamic vinegar, italian herbs, red wine...are what makes this sauce. Oh, and it will not be absolutely perfect unless you wear a brand new white shirt while making...so it becomes splattered with sauce and is ruined. That is key! My sorry self felt that would be best....white shirts and sauce are a disaster in the making...It's like wearing flip-flops to shovel snow...zero sense....
I am so upset about the shirt..but will not focus on the fact my idiocy ruined a perfectly great shirt.. My chicken was sort of a reverse edition. It was stuffed with mozarella. Total risk, but it actually worked out well.. But my new whole thing is about risks..they're not necessarily bad. Risk = Yay!! I made a pocket in the chicken and filled it with mozzarella...
Coated in panko and roasted.
Once that was completed, I served it atop pasta and my sauce. The garnish was lame. I'm on this garnish kick and the fact it's soooo hideous is just sad... However, the meal was quite yummy. Here is the final plating:
I can't complain..although, I could. But it was pretty tasty.

We are off to watch Entourage and be nerds in the comfort of our own apartment. Shhh..it's a secret. We wouln't want to destroy our reputations...that's how we roll! :-)
