I, of course, would do nothing to embarrass my sweet pea. I never, ever, ever do anything embarrassing. Ask anyone! I suppose we shall move along...although on a side note, I like toast. A lot. Who would not enjoy bread browned by exposure to radiant heat. Yum and triple yum. It's like getting a tan, only on a bread level. A toaster is actually a tanning booth equivalent in the bread world. Merely an irrelevant and trivial observation. Again, I'm working on getting out of the house a little more often...total WIP. teehee.
My entire day was not focused on toast...if you can believe. I worked and planned out a meal. I was exceptionally hungry for a roast beef sandwich. I bought a roast and slowly cooked it in the oven on low for a few hours..
I rubbed it with olive oil, fresh herbs, lots of pepper and even some garlic. Here's the before photo.
It makes the perfect lunch meat. Not to mention, way more economical and healthy than conventional lunch meat purchased from a deli. It isn't filled with icky stuff and sodium! After it finished roasting, it was thinly sliced for sandwiches...
Here are the after photos..Just like an episode of Oprah with the 'before' and 'after' people...the transition is phenomenal! Quite tasty as well!

To accompany my sandwiches I was having a salad so I made buttermilk ranch dressing. Homemade dressing is the only way to go. Ten million times better than from a bottle....again, no added salt...
Sour cream, mayo, dill, oregano, garlic, sherry, buttermilk, cayenne, pepper. All basically to your taste. Really great. Really, really great. Just great. Oh, and did I mention great? (remember Seinfeld...teehee). Just making sure my point was achieved. I'm an over-achiever! Not really...again...smoke and mirrors...
Three guesses and the first two do not count as to what is enveloped in the aluminum foil...
I'll give you a moment to think....Yes!!! A baked potato. Excellent guess! Ummmmm. It was so good. Lots of butter and sour cream kinda-sorta assist in its tastiness..
While the potato finished baking I assembled my sandwiches...
I made half with dijon, cheddar and beef. The other have had blue cheese, horseradish and beef. I topped both with micro-greens. They needed to be used and they are both gorgeous as well as scrumptious!
Everything turned out so well. I cannot complain one iota! Coincidentally iota is the 9th letter of the greek alphabet with a value of 10...perfect. Perhaps I'd give this meal a 9.25...I was excited for a sandwich...I can tend to be a tad overzealous with things. Carbs can do that to a gal...
"Mama...are you still talking...I thought I asked politely for you to keep quiet hours ago?!?!"
She is such a sassafras! Here was dinner...
I know...I know...iceberg lettuce. Zero nutritional value....but I really wanted some and I have zero regrets! So please don't judge...I couldn't resist!
That was our evening in a nutshell.. At least some great food was consumed and relatively good times were had by all. Thank you for being a part of our lives. We'll be here all week so please stay tuned! I'll still be listening to the same song, but that's how I roll!
